云南剥隘鸡肌肉中氨基酸的组成及含量分析 被引量:12

摘要 剥隘鸡是云南省富宁县特有的地方小型家禽品种,以个小肉厚、微黄鲜嫩而得名。本试验采用高效液相色谱法(high performance liquid chromatography,HPLC)分别对不同性别的7月龄云南剥隘鸡胸肌和腿肌中的17种氨基酸进行测定分析。结果表明:剥隘鸡胸肌和腿肌(干重)中总氨基酸含量在65%~70%之间,其中胸肌氨基酸总量和必需氨基酸含量高于腿肌,公鸡肌肉氨基酸总量高于母鸡;肌肉鲜味氨基酸中以谷氨酸含量最高,天冬氨酸、精氨酸含量次之;肌肉中7种人体必需氨基酸种类齐全、含量丰富,必需氨基酸/总氨基酸(essential amino acids/total amino acids,EAA/TAA)和必需氨基酸/非必需氨基酸(essential amino acids/nonessential amino acids,EAA/NEAA)分别接近和高于世界卫生组织/联合国粮农组织(World Health Organization/Food and Agriculture Organization of the United Nations,WHO/FAO)的推荐值。试验结果为云南剥隘鸡肌肉的营养价值评定和进一步开发利用提供参考。 Boai chicken which is well-known as a small and fleshy,yellowslightly and tender meatis a local small poultry species in Funing county of Yunnan province. The experiment wanted to analyze17 kinds of amino acids in pectoral muscle and leg muscle of differentgenders7-month-old Yunnan Boai chicken by high performance liquid chromatography(HPLC). The result showed that the contents of total amino acids in pectoral muscle and leg muscle of Yunnan Boai chicken ranged from 65 % to 70 %,among them the contents of total amino acids and essential amino acids in pectoral muscle were higher than that in leg muscle,and the contents of total amino acids in cock was higher than that in hen;and then the content of glutamic acid in muscle delicious amino acidswas the highest,which followed by aspartic acid and arginine;7 kinds of essential amino acids in human body were complete and rich in content,the essential amino acids/total amino acids(EAA/TAA)and essential amino acids/nonessential amino acids(EAA/NEAA)respectively were close to and higher than the recommended values of WHO/FAO. The experimental resultcould provide a reference for evaluation of nutritional value and the further development and utilization of Yunnan Boai chicken.
