摘要
假单胞菌的生长繁殖是影响冷却猪肉货架期的重要因素之一。为证实假单胞菌为冷却猪肉的特定腐败菌,将屠宰后的冷却猪肉4℃贮藏,分离鉴定出的一株假单胞菌为接种量,测定了假单胞菌数量与菌落总数、挥发性盐基氮值、色差L*值及感官评定分值等品质指标,并确定冷却猪肉的假单胞菌腐败限控量。将冷却猪肉分别置于0、5、10、15、20、25℃条件下进行假单胞菌计数,且建立假单胞菌Gompertz方程的一级、二级生长预测模型,并运用0、5、10、15、20、25℃温度下猪肉货架期进行模型进行适应性验证,预测值与实际货架期值偏差均小于1 d。研究结果表明:通过试验发现菌株JXJ属于假单胞菌;且Gompertz预测模型能较好地预测不同条件下冷却猪肉中假单胞菌的生长情况。
The growth and reproduction of Pseudomonas spp. was one of the important factors affecting the shelf life of chilled pork. The aim of the present study was to confirm that the Pseudomonas.spp was a specific spoilage and establish shelf life prediction model of pork according to determination of the total number of the Pseudomonas.spp,total volatile base nitrogen(TVB-N) value,and the color difference L*value of sensory evaluation scores and other quality indicators during storage at 4 ℃ and determine the amount of corrosive control of the Pseudomonas. The Pseudomonas.spp count was performed stored at 0,10,15,20,25 ℃,respectively.The primary growth model and the secondary model and the shelf life prediction model were established by the Gompertz equation. The model of pork shelf life was adaptive verified at 0,5,10,15,20,25 ℃. The results showed that the Gompertz prediction model could effectively predict the growth of the Pseudomonas.spp. JXJ and the forecast was less than 1 day compared to the actual shelf life. Hence,it could be applicable that the shelf life prediction model. This study provided a reasonable basis to ensure the quality safety of chilled pork.
