摘要
使用循环伏安法研究了抗坏血酸与脯氨酸在水溶液和磷酸盐(PBS)缓冲溶液中的相互作用.电化学结果表明:抗坏血酸的羰基氧原子及烯二醇羟基上的氢原子可与脯氨酸亚氨基中的氢原子/氮原子、羧基上的氢原子/氧原子形成氢键,从而抑制了抗坏血酸电氧化反应的进行.量子化学计算进一步证实了上述结论.
The interactions of ascorbic acid (AA) with proline in aqueous solution and phosphate buffer saline (PBS) solution were studied by cyclic voltammetry. The electrochemical results show that the O atom on the carbonyl group and the H atoms on the enediol of AA can form hydrogen bonds with the H/N atoms on the imino group and the H/O atoms on the carboxyl of proline, making the electro-oxidation reaction of AA more difficult. It is further confirmed by quantum chemical calculation.
