潮汕传统饮食的文化审视

摘要 本文从饮食作为一种媒介、饮食文化作为一种传播的仪式观的研究视角入手,探讨潮汕饮食文化的文化记忆、文化审视,指出饮食文化是潮汕文化的传播仪式符号体系,为潮汕人提供着一种味觉的族群的身份认同。同时通过访谈与问卷,探讨潮汕饮食文化的传播困境,指出潮汕饮食文化存在受众妥协性接受与文化多元融合的趋势,但也存在塑造品牌意识薄弱的缺陷。作为海丝文化重要发源地的潮州应当在"一带一路"背景下讲好潮汕饮食文化故事,塑造潮汕饮食文化品牌,传播潮汕文化。 This article starts from the perspective of food as a medium and food culture as a communica-tive ritual view, discusses the cultural memory and cultural examination of Chaoshan food culture, andpoints out that food culture is the ritual symbol system of Chaoshan culture, providing Chaoshan peoplewith an identity that extents from taste to ethnicity. In the interviews and questionnaires about thepredicament of the Chaoshan food culture, it was pointed out that Chaoshan food culture has the tendencyof audience acceptance and cultural diversity, but there are also defects in brand shaping awareness.Chaozhou, the important birthplace of the Haisi culture, should tell an impressive brand story of Chaoshanfood in the context of the "One Belt and One Road" policy and createa cultural brand for Chaoshanfood, which is a key element for spreading Chaoshan culture.
