摘要
法国高档餐厅如今已成为法国高级料理发展、创新和征服世界的试验场地及推广平台。两百多年的发展历程为其积淀了一套独具特色的高档餐厅经营模式。文章以米其林二星和三星为主的法国高档餐厅为例,首先探究它们经营模式的共性,进而反思其对当下中国高端餐饮的借鉴意义。
High-end restaurants in France have become the test field and promotion platform for haute cuisine to develop, to innovate, and to conquer the world. An over 200-year history of development has helped them accumulate and develop unique operating models. Taking Michelin two-star and thine-star restaurants, which are the dominating parts of the high-end French restaurants, as the object of study, the paper analyzes the sim- ilarities of their operating models, and then examines their reference meaning for China's high-end cuisine.
