摘要 主要介绍中式香肠在夏季生产加工流程,重点阐述了原料处理、腌制、干燥等具体生产工艺,并对中式香肠夏季生产工艺关键控制点提供借鉴,为夏季生产中式香肠提供了新的工艺思路。 The production processing process of Chinese - style sausage in summer was introduced, and concrete production technologies including raw material treatment, curing and drying were mainly described, and it provided reference for critical control point in the production technology of Chinese - style sausage in summer. It provided the new technology thought to process Chinese - style sausage in summer.
