摘要
"曲为酒之骨",大曲的质量直接关系着白酒的质量。为提高大曲的质量,在大曲制作的拌料过程中加入一定比例(质量比:5%、10%、15%)的窖泥培养液来制作强化大曲。经与同批次的对照大曲进行综合比较分析,添加质量比为10%窖泥培养液的强化大曲品质好,且所产原酒质量高。窖泥培养液以优质老窖泥、大曲粉、黄黏土、生长因子、混合提取物、酿酒副产物(糟醅、黄水)等为原料制备而成[1]。
Daqu, as the core of Baijiu, its quality is directly related to liquor quality. In order to improve Daqu quality, a certain proportion of pit mud culture solution(mass ratio: 5 %, 10 %, 15 %) was added in materials mixing process to produce intensified Daqu.And pit mud culture solution was prepared with high quality aged pit mud powder, yellow clay, Daqu, growth factor, mixed extract,fermenting by-products(fermented grains, water) etc. Compared with the contrast Daqu, the intensified Daqu with the adding proportion of 10 % had the best quality.
