摘要
在世界各国积极加强发展体育建设的过程中,对体育赛事中的食品安全也给予了高度关注。有效地避免体育赛事中出现食品安全问题已成为举办方工作的重点之一。本文从食品安全HACCP管理的角度对HACCP的组成和体系特点进行说明,结合相关具体案例,阐述现阶段体育赛事食品安全体系中运用HACCP所存在的问题,并对如何有效构建HACCP体育赛事食品安全体系提出几点相应的对策建议,以期为相关研究人员提供必要参考。
In the process of strengthening the development of sports construction in various countries around the world, food safety in sports events has also been given high attention. Effectively avoiding food safety problems in sports events has become one of the priorities of the organizers. This paper described the composition and system characteristics of HACCP from the perspective of food safety HACCP management, and combined relevant specific cases, expounded the existing problems of using HACCP in the food safety system of sports events. It also put forward some countermeasures and suggestions on how to effectively construct the food safety system of HACCP sports events, and provided necessary reference for relevant researchers.
