摘要
为探讨不同饲养方式对苏北草鸡屠宰性能及肉品质的影响,本试验选用60日龄体重相近的草母鸡180只,随机分为林地散养、低网床上平养两个组,每组设3个重复,每个重复30只鸡。210日龄从每个重复随机抽取4只、每组共12只鸡进行屠宰、取肉样,测定并比较屠宰性能和肉质等指标。结果显示:散养鸡肝脏重、肌胃重极显著高于网上平养鸡(P〈0.01);散养鸡的腹脂率、腺胃重极显著低于网上平养鸡(P〈0.01);散养鸡的胸肌黄度、腿肌红度、腿肌黄度显著或极显著高于网上平养鸡(P〈0.05或P〈0.01);散养鸡的腿肌肌内脂肪含量极显著低于网上平养鸡(P〈0.01)。结果表明:不同饲养方式对草鸡的屠宰性能和肉品质有一定影响,散养方式提升了草鸡的屠宰性能和肉品质。
In order to investigate the effects of different rearing methods on the slaughter performance and meat quality of native chickens in northern Jiangsu Province, 180 native chickens at 60 days of age and of similar body weight were randomly divided into two groups: the free-range woodland group and the low net bed group. Each group had three replicates of 30 chickens each. At the age of 210 days, four birds were randomly selected from each replicate (a total of 12 chickens in each group) were slaughtered to obtain meat samples. The slaughter performance and meat quality were measured and compared. The results showed that the hepatic weight, and myogastric weight of the free-range chickens were significantly higher than those of the low net bed chickens (P〈0. 01 ) ; the abdominal fat proportion and glandular and gastric weights of the free-range chickens were significantly lower than those of the low net bed chickens ( P〈0. 01 ) ; the pectoral muscle yel-lowness, leg muscle redness, and yellowness of free-range chickens were significantly or very significantly higher than those of the low net bed chickens (P〈0. 05 or P〈0. 01 ) ; the leg muscles of the free-range chickens had significantly lower intramuscular fat than the low net bed chicken (P〈0.01). These findings indicated that different rearing methods had certain effects on the slaughtering performance and meat quality of native chickens. The free-range method improved the slaughter performance and meat quality of the chickens.
