过氧化氢处理对苹果渣膳食纤维的影响 被引量:2

Effects of Hydrogen Peroxide Treatment on Properties of Apple Pomace Dietary Fiber

摘要 试验采用过氧化氢处理苹果渣(AP),研究过氧化氢pH、质量分数、处理温度和处理时间对膳食纤维(DF)产率和可溶性膳食纤维(SDF)含量的影响,从而确定最佳处理条件,并探讨了过氧化氢处理对苹果渣性质的影响。结果表明,当过氧化氢pH为11,质量分数为1.67%,处理温度为70℃,处理时间为2 h时,DF产率可达76%,SDF含量达到30.20%。过氧化氢处理能增加AP膳食纤维的灰分含量,降低蛋白质和脂肪的含量;提高总DF(TDF)和SDF含量,降低不溶性DF(IDF)含量;提高持水力和膨胀力,降低持油力。红外光谱测定结果很好地解释了处理后苹果渣性质发生变化的原因;线虫试验表明AP和处理苹果渣膳食纤维(TAPDF)具有一定的降脂功能,且TAPDF的降脂功能明显提高。 The apple pomace(AP) was treated with hydrogen peroxide. The effects of hydrogen peroxide pH, mass fraction, treatment temperature and treatment time on dietary fiber(DF) production rate and soluble dietary fiber(SDF) content were determined to optimize the modification conditions. Effects of hydrogen peroxide treatment on properties of AP were discussed. The optimum conditions were that pH was 11, hydrogen peroxide concentration was 1.67%, treatment temperature was 70℃ and treatment time was 2 h. Under these conditions, the DF yield was 76%, and SDF content was 30.20%, respectively. The content of ash in TAPDF increased after treatment while the content of protein and fat decreased. The content of total DF(TDF) and SDF increased, while the content of insoluble DF(IDF) decreased. The water holding capacitity and swelling capacity were both improved, while the oil holding capacity was declined. Results of infrared spectrum were better to explain the changes of the properties of AP after treatment. The test of Caenorhabditis elegans showed that the AP and treated APDF(TAPDF) had a certain function for reducing fat, and the function of TAPDF lowering lipid was significantly improved.
