中智不同赤霞珠干红葡萄酒的品质与抗氧化分析 被引量:1

摘要 选取烟台万第、云南高山、烟台桃村万沐、智利阳光勋章及智利康纳斯顿5款中国、智利赤霞珠干红葡萄酒,进行感官、理化及抗氧化活性分析并比较。结果表明,烟台万第在外观上表现最佳,清澈透明,呈宝石红色且有挂杯现象,平均得分高达8.2;而在香气、口感及整体方面,智利的阳光勋章得分最高,分别为8.4,7.3和7.8分,此款酒香气纯正、馥郁,含有红色浆果、香料等复杂香气,单宁中高,酒体丰满,质地复杂、余味持续性中长。根据GB/T 15038—2006检测标准,此5款酒理化指标均在国标允许范围内,智利的赤霞珠干红葡萄酒相对于国内同款葡萄酒干浸出物、总二氧化硫含量偏高,总酸、游离硫却偏低。经抗氧化活性分析试验得出,智利阳光勋章清除DPPH、O_2^-自由基清除率均为最高,DPPH自由基清除率达到98%,是云南高山的1.06倍;O_2^-自由基清除率为63.28%,是云南高山的1.67倍;烟台万第的还原力最强,为0.724,是云南高山的3.12倍。 Five kinds of different Cabernet Sauvignon dry red wine of Yantai Wandi, Yunnan Alpine, Yantai Taocun Wanmu, Chile Sunshine Medal and Chile Kang Naston were selected and carried out on physical and chemical, sensory and antioxidant activity analysis experiments. The results showed that Yantai Wandi was the best in appearance, clear and transparent, with a deep ruby red, with legs, of which the score was as high as 8.2; In terms of aroma, taste and overall, Chile Sunshine Medal got the highest score. The scores were 8.4, 7.3 and 7.8, respectively. And the wine had pure and fragrant aroma with red berries, spices, middle and high tannins, full-bodied, complex texture, persistent and long aftertaste. According to the GB/T 15038—2006, five kinds of wine were all within the standard. Chile's Cabernet Sauvignon dry red wine, dry extract and total oxidation content were high, but total acid and free sulfur were low relative to the domestic wine. Through the analysis of antioxidant activity test, DPPH free radical scavenging and O_2^- radical activity of Chile Sunshine Medal are the highest, and DPPH free radical scavenging reaching 98% is 1.06 times as high as of Yunnan Alpine; and O_2^- radical activity reaching 63.28% is 1.67 times as high as of Yunnan Alpine. Then reducing power of Yantai Wandi was the strongest which was 0.724, and was 3.12 times as high as of Yunnan Alpine.
