摘要 我国每年冷冻产品的需求量逐年增加,因为冷冻食品质量安全引发的事故每年都在发生,为避免食品安全事故对于冷冻产品货架期系统性的研究从而建立起完整的监控体系已迫在眉睫。在整理和总结现有相关研究文献的基础上,阐述了冷链物流温度波动对食品感官、理化和卫生品质的影响,对当前预测食品货架期的5种方法进行比较分析,并对当前监测手段作相关阐述,最后对食品品质货架期影响作相关展望。 China's annual demand for frozen products increased year by year, but the quality of frozen food safety accidents occur every year. This is an urgent need to study the frozen product shelf-life systematically and establish a complete monitoring system which can avoid food safety incidents. This report is on the basis of organizing and summary of existing research literature. The effects of cold chain temperature fluctuation on food sensory, physicochemical and hygienic quality are described. Five methods of food shelf-life prediction are compared, and the current monitoring methods are expounded. Finally, prospect temperature fluctuations on food quality and shelf.
