Application of NMR/MRI in Dairy Industry

核磁共振及成像技术以其无损、快速、精确、能够获得被测样品的内部结构等诸多优势,从而一直是研究的热点。随着核磁技术的发展,核磁共振技术的应用从医学和工程领域逐渐向食品工业中延伸。通过查阅大量国内外文献,重点介绍近几年核磁共振及成像技术在乳制品工业中的应用,从而为核磁技术更好地服务于乳制品生产提供参考。

It has been a hot research that Nuclear Magnetic Resonance（NMR） and Magnetic Resonance Imaging（MRI） are well-known non-destructive, fast, accurate and acquiring structural information of samples. With the development of nuclear magnetic technology, the application of NMR gradually extends to food industry from the field of medicine and engineering. The application of NMR/MRI in dairy industry is mainly introduced on the basis of recent researches. Meanwhile, it is a reference for NMR better serving for the production of dairy products.
