摘要
为了满足快速识别豆源性植物蛋白饮料掺伪的要求,提出了一种建立在优化液相色谱质谱条件下,检测大豆异黄酮成分的超高效液相色谱串联质谱PLC-MS/MS)方法。该方法检测出的6种大豆异黄酮成分在(5.0~200)μg/L范围内线性相关性良好,相关系数(R2)大于0.99,回收率均达80%以上。利用该方法检测市售的4种植物蛋白饮料(杏仁露、椰子汁、核桃乳、豆乳)中6种大豆异黄酮的质量浓度,并用杏仁露和豆乳进行掺杂实验,结果表明,该检测技术能够对植物蛋白饮料中6种大豆异黄酮成分进行定性定量检测,从而辅助鉴别豆源性掺杂使假行为,为保证植物蛋白饮料的质量、安全消费提供了有力的检测手段。
In order to verify soybean contents in vegetable protein drink products rapidly, a soybean isoflavone detecting method was developed with optimized liquid chromatography tandem mass spectrometry conditions, called UPLC-MS/MS (ultra performance liquid chromatography-tandem mass spectrometry). In this method, all six kinds of soybean isoflavones have strong linear correlations (R2〉 0.99) in the range of (5.0-200)μg/L, and the recoveries were more than 80%. The method was tested by four kinds of traditional vegetable protein drinks(almond juice, coconut milk, walnut milk and soy milk). The results indicated that the six kinds of soybean isoflavones could be effectively detected and quantified from vegetable protein drinks. This method can help to determine soybean isoflavone in vegetable protein drink products, and provide a useful technical support for ensuring the quality and safety of the consumption of vegetable protein drink products.
