摘要
为研究鸡蛋、鸭蛋和鹌鹑蛋蛋壳颜色的差异,选取鸡蛋(粉壳和绿壳)、鸭蛋(绿壳)和鹌鹑蛋(不同斑点大小),测定了不同颜色蛋壳色素的扫描光谱以及原卟啉-IX和胆绿素-IX的相对含量,并进行了比较分析。结果表明:鹌鹑蛋壳色素提取物吸收光谱的最大值为412nm,在560nm有明显的波峰,与胆绿素的锌螯合物光谱相符,同时光谱的最高峰在410~680nm,与原卟啉-IX的光谱相符,表明鹌鹑蛋蛋壳色素主要由原卟啉-IX、胆绿素-IX及胆绿素的锌螯合物组成;鹌鹑蛋壳中色素总量最高,其他颜色蛋壳的蛋之间没有差异;鹌鹑蛋壳中的原卟啉-IX、胆绿素-IX及胆绿素的锌螯合物均高于不同壳色鸡蛋和鸭蛋中的色素含量。
To study the difference of eggshell color among chicken, duck and quail, chicken eggs with pink and blue color, duck eggs with blue color and quail eggs with different spot size were selected for scanning spectra of different color eggshell pigment and the relative content of protoporphyrin--IX and biliverdin--IX. The maximum value of ab- sorption spectra of quail eggshell pigment extracts was 412nm, an obvious peak at 560nm, which is consistent with the spectra of zinc chelate of biliverdin. At the same time, the highest peak of spectrum is at 410 ; 680nm, which is consistent with the spectra of protoporphyrin--IX and showed that the quail eggshell pigment is mainly composed of protoporphyrin--IX, zinc chelate green bile composition and biliverdin--IX. The total amount of pigment in the quail egg shell is the highest, and there are no differences among the eggs of other color eggshells. Quail eggshell of proto- porphyrin--IX, biliverdin--IX, zinc chelate of biliverdin were higher than the pigment of different shell color of egg and duck's egg shells.
