摘要
以单宁提取得率为评价指标,采用单因素和正交试验优化赤霞珠葡萄梗中单宁提取的条件;以Vc为参照物对单宁提取液进行ABTS、DPPH、羟自由基、铁离子自由基清除性能试验。结果显示:相同条件下,赤霞珠葡萄梗中单宁提取率高于葡萄皮;4种自由基清除试验中,赤霞珠葡萄梗单宁提取液对ABTS、DPPH自由基清除能力高于Vc溶液,特别是对DPPH自由基的清除效果最好,提取液单宁质量浓度40μg/m L时,清除率可达100%。
In this study, the extraction rate of tannin was used as the evaluation index, and the single factor and orthogonal tests were used to optimize the conditions of tannin extraction in Cabernet Sauvignon grape stem. Antioxidant activity was detected by ABTS、DPPH、hydroxyl radical and Iron ion free radical scavenging tests, using Vc as a contrast. The results showed that the extraction rate of tannins in grape stem of Cabernet Sauvignon was higher than that of grape skin under the same conditions. In the four free radical scavenging tests, the tannin extracts of Cabernet Sauvignon grape stem had higher clearance rate than Vc solution, especially for the removal of ABTS free radicals, and the clearance rate can reach 100% when the amount of extract added was 40 μg/m L. It showed that the Cabernet Sauvignon pomace has high tannin concentration and strong antioxidant capacity in vitro. The results and data of this study can provide support for the development and utilization of waste pomace from Cabernet Sauvignon wine production.
