不同桃品种果皮色差值与色素含量的关系分析 被引量:7

摘要 以9个桃品种为试材,通过对其果皮色素含量和色差值的测定分析,探讨不同类型桃品种果实成熟时外观品质的差异,以及桃果皮色泽指标之间的关联性。结果表明,桃品种果面亮度L值与色度角H值呈极显著负相关,即果面颜色越深亮度越小;桃果皮叶绿素与花青苷含量呈极显著负相关关系。主成分分析表明,桃品种果皮色泽指标综合表现较好的是中蟠11号。通过对9个桃品种及其色泽指标进行对应分析,可知中蟠11号和春美的b值和H值较高,着色偏橙;中农金辉、双喜红、中蟠10号的果皮叶绿素含量和果面亮度值L的表现较为突出,为高亮度品种;果皮花青苷含量、色差a值和c值对春蜜、中红、中桃2-24、春雪的影响较大,着色偏红,较为鲜艳。 The appearance quality differences of 9 peach varieties at ripening stage and the correlations among various color indexes of peach peel were studied by determining their peel pigment content and chromatic aberration value. The results showed that the fruit surface brightness(L-value) of different peach varieties was very significantly negatively correlated with the chroma angle(H-value),namely the deeper the fruit surface color,the smaller the fruit surface brightness. The chlorophyll content in peach peel was very significantly negatively correlated with the anthocyanin content. Moreover,the comprehensive performance of peach peel color indexes of Zhongpan No. 11 was better than that of other varieties by principal component analysis. Among 9 peach varieties,Zhongpan No. 11 and Chunmei had higher b-value and H-value,and their fruit peel color was relatively orange;the peach peel chlorophyll content and L-value of Zhongnongjinhui,Shuangxihong and Zhongpan No. 10 were much higher,and they could be regarded as high-brightness varieties; the anthocyanin content in peach peel and the chromatic aberration a-value and c-value had greater influences on the fruit peel coloration of Chunmi,Zhonghong,Zhongtao 2-24 and Chunxue,and these varieties had relatively red and bright-colored fruit peel.
