云南省市售饮料微生物的质量分析

Quality analysis of beverage microorganisms in Yunnan Province

摘要 目的对2016年云南省市售饮料进行微生物检测,了解饮料的污染情况,分析检测结果,为保证饮料饮用安全提供依据。方法采集云南省16个县市的334批饮料,依据GB 19297—2003《果、蔬汁饮料卫生标准》进行微生物检验。结果对2016年云南省市售的334批次饮料进行微生物检测,统计得出按品种分6类饮料总体合格率为97.60%,其中"其他饮料"最低,为93.26%;按微生物检验项目分,菌落总数合格率最低,为97.76%;统计出不同种类饮料、不同抽样地间的合格率,发现以上2种统计合格率之间差异均无统计学意义(P>0.05),不同微生物检测项目之间合格率有明显差异,且菌落总数的不合格率最高。结论分析饮料污染的原因可能与操作环境及生产人员的卫生意识有关,建议相关部门应采取措施,加大对饮料卫生方面的监管,从而提高饮料卫生的安全,减少不合格饮料对人体的危害。 Objective The beverages sold in Yunnan market were conducted for microorganism detection in 2016,so as to understand the contamination status,analyze the test results,and provide basis for ensuring the safety of drinks. Methods 334 batches of beverages from 16 counties in Yunnan Province were collected and conducted for the test of microorganism according to GB 19297—2003 Fruit and Vegetable Juice Health Standards. Results According to the microbiological tests to 334 batches of beverages sold in Yunnan Province in 2016,the overall pass rate of 6 types of beverages by category was 97. 60%,of which the pass rate of " other beverage" was the lowest(93. 26%); according to the microbiological test items,the lowest total colony passing rate was 97. 76%. Different types of beverages,sampling rates between different regions were compared,and there was no statistical significance in the difference of statistical qualification rate between the above two kinds(P〈0. 05). There was a significant difference in the pass rate between different microbial testing items,and the total number of unqualified colonies was the highest. Conclusion The cause of beverage contamination may be related to the operating environment and the hygiene awareness of the production personnel. It is recommended that relevant departments should take measures to increase the supervision of beverage hygiene,improve the safety of beverage hygiene and reduce the harm of unqualified beverages to human body.
