摘要 为优化NaCl与CaCl_2联合处理下发芽大豆富集γ-氨基丁酸(GABA)工艺条件,首先通过研究NaCl的施加方式获得发芽大豆富集GABA的最适处理方式,然后对NaCl、CaCl_2的施加浓度及其组合进行了优化。结果表明,在大豆正常发芽2 d后施加NaCl对GABA具有显著富集效果。单因素试验结果表明,分别用60 mmol·L^(-1)NaCl和0.2 mmol·L^(-1)CaCl_2处理发芽大豆,GABA富集效果最为明显。当采用52.62 mmol·L^(-1)NaCl联合0.35 mmol·L^(-1)CaCl_2处理发芽大豆时,GABA含量达到4.09 mg·g-1DW。适宜的NaCl、CaCl_2施加方式及其联合处理浓度对发芽大豆GABA的富集具有显著影响。本研究结果为生产富含GABA的大豆芽苗提供了数据支撑。 In order to optimize the accumulation of γ-aminobutyric acid( GABA) in germinated soybean under NaClCaCl2 treatment,the appropriate application way of NaCl was investigated firstly to obtain GABA-riched soybean sprouts,and then the optimization of NaCl and CaCl2 concentration for accumulating GABA was carried out. The results showed that NaCl application way had a significant effect on GABA accumulation in 2 d-germinated soybean compared with water treatment. Single factor experiment showed that,GABA was accumulated significantly in germinated soybean with 60 mmol·L^(-1) NaCl and 0. 2 mmol·L^(-1) CaCl2. GABA content in germinated soybean was up to 4. 09 mg/g DW when NaCl52. 62 mmol·L^(-1) with 0. 35 mmol·L^(-1) of CaCl2 was applied. In conclusion,the appropriate application of NaCl and CaCl2 had significant effects on the accumulation of GABA in germinated soybean. This study could provide data support for the production of soybean sprouts rich in GABA.
