摘要
以胡萝卜和菠菜为原料,海藻酸钠、明胶、淀粉为增稠剂,制备胡萝卜-菠菜复合蔬菜纸。结果表明,该蔬菜纸的最佳配制方案为胡萝卜浆(胡萝卜∶水=2∶1)与菠菜浆(菠菜∶水=4∶1)的质量比为4∶3,增稠剂海藻酸钠、明胶、淀粉添加量分别为0.6%,0.5%和6.0%,铺料厚度为3 mm,在70℃条件下干燥4 h。
The processing technology of composite vegetable paper for carrot and spinach as the raw materials, sodium alginate, gelatin and starch as the thickener was investigated. The results showed that the optimum production formula and drying process were as follow:the best mass ratio of carrot pulp(carrots∶water = 2∶1)and spinach pulp(spinach∶water =4∶1)4∶3. The best composite thickening agents formulation was ascertained by orthogonal experiment was 0.6% sodium alginate,0.5% gelatin and 6.0% gelatin. The spreading thickness was 3 mm,with the temperature 70 ℃ and drying for 4 h.
