摘要 "食品理化分析原理与技术"是食品科学的重要课程,对食品质量与安全的评价具有重要意义。在目前的"食品理化分析原理与技术"教学过程中存在着许多问题,通过改革与创新,提出了五位一体教学体系的新内容,充分利用互联网调动学生积极性,引导学生自主学习,并且通过微信辅助,全面提高学生的综合能力,为食品学科培养高水平人才提供支持。 Principles and Techniques of Food Physical and Chemical Analysis is important courses in food science. It's of great importance to the evaluation of food quality and safety. At present, there are many problems in the teaching process of the Principles and Techniques of Food Physics and Chemistry Analysis. Through the reform and innovation,the new content of the five in one teaching system was put forward. The Internet was fully utilized to arouse the enthusiasm of the students and guide the students to learn by themselves. We Chat helps to comprehensively improve students' comprehensive ability and provide support for cultivating high-level talents in food science.
