摘要
采用气相色谱-飞行时间质谱法分析柠檬果皮精油中的挥发性风味成分。结果表明,共有346个化合物通过飞行时间质谱(TOF/MS)分析得到鉴定,包括酯类82种、烯类70种、醇类70种、醛类17种、酮类31种、烷类35种、其他41种。其中柠檬果皮精油中相对含量最高的是烯类、酯类及醇类化合物,相对含量最高的成分包括γ-松油烯、乙酸香叶酯、β-红没药烯等。本研究结果可为柠檬果皮精油的产品开发和品质控制提供技术支撑。
The volatile flavor components in essential oil of lemon peel were detected and analyzed by GC-TOF/MS.The results showed that a total of 346 flavor components were identified, including 82 esters, 70 alkenes, 70 alcohols, 17 aldehydes, 31 ketones, 35 alkanes and 41 others. The highest relative contents of components in this oil were alkenes, esters and alcohols, they were γ-terpinene, geranyl acetate and β-bisabolene. The results provided technical support for the development and quality control of lemon peel essential oil.
