摘要 我国榨油技术最早可追溯至汉代,《天工开物》详细记载了利用压榨法榨取油汁的榨油机械及工艺,随着现代机械化的发展,这种原始的手工加工方式逐渐被人们淡忘。内蒙古克什克腾旗常善村的一家老油坊虽经历了各种历史的沧桑,仍然保存了较为完整的传统榨油工艺。本文结合文献资料,通过实地调研对这项传统工艺进行有效记录,详细叙述古法榨油从选种到出油的制作流程,对比南方同类型工艺指出异同,对现有资料进行有效补证。 China's oil manufacture technology can be traced back to the Han Dynasty at the earliest, and Tiangong Kaiwu has detailedly recorded the oil manufacture machinery and technology. With the development of moderm mechanization, this primitive manual processing method has gradually been for- gotten by people. Although an old oil mill in Changshan Village, Keshiketengqi, Inner Mongolia, ex- perienced a variety of historical vicissitudes, it still preserved a relatively complete traditional oil ex- traction process. Through field research, this article combines literature data, records the traditional process effectively, describes the process of oil extraction detailedly from the ancient method of oil ex- traction, and compares the similarities and differences between the same type of technology in the south, the existing data for effective complementation.
