摘要
【目的】分析嘉定区2011—2014年生禽畜肉类沙门氏菌污染情况,为有针对性地制定生禽畜类食品防控措施提供科学依据。【方法】按照GB 4789. 4—2010 《食品安全国家标准食品微生物学检验沙门氏菌检验》检测沙门氏菌污染状况及其血清学分型。【结果】2011—2014年共检测样品600件,检出阳性菌株154件,总检出率为25. 67%,鸡肉类总的阳性率为29. 86%,鸭肉类为28. 33%,猪肉类为27. 78%,牛肉类为20. 83%,羊肉类为17. 71%。沙门氏菌优势血清型为肠炎沙门氏菌、鼠伤赛沙门氏菌、德尔卑沙门氏菌及印第安纳沙门氏菌。【结论】嘉定区生禽畜肉类食品存在不同程度上的食源性致病菌污染,沙门氏菌阳性检出率处于比较高的水平,应该加强对这类食品的监管,健全完善食品风险监测网络体系。
[ Objective] To analyze Salmonella contamination status of raw poultry and livestock meat in 2011-2014 in Jiading District, then providing theoretical basis for Salmonella detection, supervision, control and its safety management. The dominant species of bacteria are Salmonella enteritidis, S. typhi- murium, Salmonella derby, Salmonella Indiana. [ Methods ] On the basis of criterion of national food sani- ration examination method (GB 4789.4-2010 ) were determined Sahnonella contamination and its serologic type. [ Results] A total of 600 samples of chilled meat were examined from 2011 to 2014, and 154 strains of Salmonella were isolated and the total positive rate for all samples was 25.67%. The total positive rate for chickens was 29.86%. Chicken meat was the most seriously contaminated, followed by the chilled meat of duck, pork, beef and lamb, for 28.33%, 27.78%, 20. 83% and 17.71%, respectively. [ Conclusion] The chilled meat of poultry and livestock in Jiading District has been contamina- ted by Salmonella in different degrees, surveillance should be enhanced to ensure food safety and food risk monitoring network system is improved and perfected.
