摘要
习酒公司酱香型白酒生产用的高温大曲主要是传统人工曲,近年来开始仿生机械制曲,为了验证仿生机制曲培养过程中的微生物与理化指标是否达到人工曲的标准,确保最终成品曲达到人工曲效果。通过实验对仿生机制曲和人工曲培养过程中微生物与理化指标进行跟踪检测,然后进行分析研究,得出两者之间的差异。根据实验结果表明,培养过程中不同发酵时间的微生物种类、数量基本相当,仿生机制曲不影响大曲微生物的生长;各理化指标数值接近,仿生机制曲理化指标达到人工曲标准,符合公司标准要求。仿生机制曲的开发应用对高温大曲的生化指标不会产生不利影响,符合公司的生产需求。
High-temperature Daqu used in Xiujiu Co. Ltd. is mainly produced by traditional method. In recent years, Daqu produced by bionic-mechanism method is used. To verify the difference in the microbes and the biochemical indexes in Daqu-making process by traditional method and by bionic-mechanism method and further to ensure their actual effects, the experiments had been done. The experimental results showed that, the microbial species and quantity of Daqu produced by the two different methods were almost the same, bionic-mechanism method had no adverse influence on microbial growth. Besides, the biochemical indexes of Daqu produced by the two methods were quite equivalent. Accordingly, Daqu produced by bionic-mechanism method met the standards of Daqu produced by traditional method and it could be used in practical production.
