Application Research of Automatic Brewing Process in Liquor Production

摘要 以小曲清香型白酒为例,对自动化技术在白酒酿造中的应用进行研究。以基于FCS设计的硬件系统为基础,对现场控制层的所有执行机构进行管控,并通过工业以太网连接上层监控软件。监控软件采用力控组态设计,并嵌入管理数据库。根据生产工艺将控制系统划分为原粮存储、曲药制作、原粮蒸摊、上甑蒸馏和发酵管理5个子系统,各子系统包括过程操控界面和监控数据界面两部分,实现分区监测、综合数据分析、全局决策、分散控制。 Taking Qingxiang Xiaoqu liquor as an example, study the application of automation technology in liquor brewing. Based on the hardware system designed by FCS, all the actuators in the field control layer were controlled, and connected to the upper monitoring software through industrial ethernet. The monitoring software was designed with force control, and embedded management database. According to the production process, the monitoring and controlling system was divided into five subsystem, including grain storage, distillers yeast making, grain stewing and cooling, steamer-filling and distillating and fermentation management. Each subsystem consists of a process control interface and a monitoring data interface. The system implemented district monitoring, integrated data analysis, global decision-making and distributed control.
