蛋白质是人体重要的营养物质,本文总结归纳了蛋白质含量测定方法,包括色谱法、分光光度法、滴定法、酶联免疫吸附法、联合测定法以及氨基酸折算法共六种蛋白质含量测定方法,同时比较了上述测定方法的优缺点,以期为蛋白质含量测定提供参考。
