摘要
以冷鲜猪肉为试验原料,以菌落总数、肉色、pH、感官评定为指标,研究万寿菊α-三联噻吩抗菌膜对冷鲜猪肉的保鲜效果影响。结果表明,万寿菊α-三联噻吩能够有效抑制冷鲜肉微生物产生,延长冷鲜肉的货架期。
This artical chose chilled pork as raw material, studied the impact of α-terthienyl on preservation of pork. Effectiveness for pork preservation were investigated by determination of aerobic bacterial count, pH value, color index and sensory evaluation scores. The results showed that the tagetes α-terthienyl could effectively inhibit microorganisms and prolong preservation time for chilled pork.
