摘要 食品安全日益成为一个重要的公共卫生问题,食源性疾病、转基因食品和食品原料造假在发达国家和发展中国家都呈现出普遍和日益增长的趋势。传统检测方法费时费力,难以满足对食品快速检测的需求,应用新型数字PCR技术针对食源性病原体、转基因食品和原料造假的方法,开发出可以满足当下食品快速和精确监测的需要,并控制和预防人类食源性感染的最有效方法之一。为此,综述了近年来数字PCR技术在食品快速检测中的应用。 Food safety has increasingly become an important public health problem. The food-borne diseases, geneticallymodified foods and falsification of food raw materials have become a common and growing public health problem in both the developed and developing countries. However, the traditional detection methods are time-consuming and laborious, which are insufficient to meet the demands of food rapid detection. The new digital PCR technology can be developed to detect the food-bornepathogens, genetically modified foods and false raw materials, which can meet the demands of rapid and accurate food monitoring,and it is one of the most effective methods for the control and prevention of human food-borne infections. So, the application ofdigital PCR technology in food rapid detection is reviewed in this paper.
