摘要 水果和蔬菜中富含植物化学物质,其中多酚是膳食中主要的功能活性成分。由于结合方式和萃取方法的不同,多酚被分为可萃取多酚(Extractable polyphenol,简称EPP)和不可萃取多酚(Non-extractable polyphenol,简称NEPP)。不可萃取多酚作为一种新兴的膳食多酚,也被称为高分子抗氧化剂,在过去的研究中往往被忽视。与研究较多的可萃取多酚相比,不可萃取多酚具有不同的组成和生理特性,主要在人体结肠中发挥作用,与健康有重要联系,特别是胃肠道健康方面。从不可萃取多酚的提取、测定、生物可利用性及与健康相关的特性等方面综述了不可萃取多酚的研究进展。 The fruits and vegetables are rich in plant chemicals, in which polyphenols are the main functional active ingredients in the diet. Due to the combination of methods and extraction methods of different polyphenols, they were divided into ex- tractable polyphenols (EPP) and non-extractable polyphenols (NEPP) . Non-extractable polyphenols are an emerging dietary polyphenols, which are also known as maerontoleeular antioxidants, and are often ignored in the past research. Compared with the extractable polyphenols which has been studied much more, the non-extractable polyphenols have different compositions and physiological characteristics, which play an important role in human colon. They are closely related to health, especially gastrointestinal health. The research progress of extraction and determination of polyphenols, bioavailability and health-related properties of non extractable polyphenols was reviewed in this paper.
