摘要 "食品物性学"课程是食品科学与工程专业的一门专业必修课,具有很强的实用性和实践性。在"食品物性学"教学改革中,将"食品物性学"的实验课依据课堂教学内容设计成不同的项目,在此基础上将实验项目与课堂教学内容进行融合并运用项目教学法对课程教学进行改革。主要介绍并总结了基于实验课改革的项目教学法在"食品物性学"课程教学改革与实践中的应用及教学效果。 The Physical Properties of Foods is a required course for undergraduate students of food science and engineering, which is outstanding for its strong practicality. In the teaching reform of this course, the experimental course was integrated into two projects according to the contents of the textbook. Then, the project teaching method was applied in reforming Physical Properties of Foods course. In particular, the experiment course was coordinated with teaching courses to improve the teaching quality. This study introduced and summarized the application and effect of the project teaching method in the teaching reform and practice of the Physical Properties of Foods course.
