摘要
采用同时蒸馏萃取法(SDE)提取滇绿茶和滇红茶中的挥发油,结合气相色谱-质谱联用技术(GC-MS)对其化学成分进行分析,并以面积归一化法测定各个成分的相对含量.从滇绿茶和滇红茶挥发油共分离鉴定出135个化合物,其中滇绿茶鉴定出74个化合物,滇红茶鉴定出61个化合物,二者各占其峰面积的88.90%和86.36%.从分析结果看,滇绿茶和滇红茶中的挥发性成分共有24种,主要为醛类、醇类、酯类、烯烃、酰胺和腈类化合物,滇绿茶中的代表性挥发性成分为苯乙醛,滇红茶中的代表性挥发性成分为α-松油醇和左旋-β-蒎烯.
Volatile oils were extracted from Yunnan green tea and black tea by simultaneous distillation extraction (SDE) and their chemical constituents were analyzed with GC-MS. The relative content of each constituent was determined by area normalization method. 135 kinds of compounds were isolated and identified in the total volatile oils, of which 74 compounds were identified in Yunnan green tea, occupying 88.90% of its peak area, and 61 compounds in Yunnan black tea, occupying 88.90% of its peak area. The experimental results show that there are a total of 24 volatile components in Yunnan green tea and black tea, of which the major constituents are aldehydes, alcohols, esters, olefins, amides and nitrile; Acetaldehyde is the representative volatile component in Yunnan green tea; α-Terpineol and (1S)-(1)-β-Pinene are the representative volatile component in Yunnan black yea.
