摘要
肉毒杆菌是一种生长在缺氧环境下毒性很强的细菌,在罐头食品及密封腌制食品中具有极强的生存能力,鱼类罐头食品中极易出现肉毒杆菌污染现象。人类在食入过量的肉毒杆菌后将会出现中毒迹象,严重时更会危及人的生命安全。因此,加强鱼类罐头食品管理,防止其受到肉毒杆菌的污染很有必要,是保障食品安全的重要内容。本文对鱼类罐头食品中肉毒杆菌的污染风险进行分析,并就其管理对策进行简单探讨。
Botox is a highly toxic bacteria that grows in anoxic environments, botox has strong viability in canned foods and sealed pickled foods. Botox contamination is extremely prone to fish canned foods. Humans will show signs of poisoning after eating excessive amounts of Botulinum. In severe cases, it will endanger human life. It is necessary to strengthen the management of canned fish food to prevent it from being contaminated by botulinum, and it is an important part of ensuring food safety. This paper analyzes the risk ofBotulinumcontamination in canned fish foods and briefly discusses its management strategies.
