摘要
产教融合可以发挥企业在人才培养中的重要作用。高校联合餐饮企业实行产教融合协同育人,在实践课程教学过程中,给烹饪专业学生配备企业导师,是产教协同育人的内在要求。企业导师在学生职业素养引导、职业技能提升等方面发挥着举足轻重的作用,但实际教学过程中,企业导师对学生疏于管理、考评不严等情况时有发生。本文从企业导师的管理制度、经费、实施路径等方面,调整烹饪专业课程体系结构,对"企业导师制"实施方案进行测评,总结经验,形成有效的适合烹饪专业职业院校的人才培养方案。
Integration of production and education is an important main function of enterprises in personnel training. It is an inherent requirement for college to implement the integration of production and teaching and provide cookery students with enterprise tutors in the course of practical teaching. Enterprise tutors play an important role in the guidance of students’professional quality and the promotion of Vocational skills. However, in the actual teaching process, enterprise tutors often neglect the management of students, and the evaluation is not strict. This paper adjusts the curriculum structure of Culinary Specialty from the aspects of management system, funds and implementation path of enterprise tutor, evaluates the implementation scheme of “enterprise tutor system”, summarizes experience, and forms an effective talent training scheme suitable for culinary professional vocational colleges.
