摘要
樱桃具有较高的含糖量和十分丰富的营养,可以添加在啤酒中,酿造具有樱桃口味的新品种啤酒。研究发现,樱桃啤酒加工处理实践中,会有大量的副产物产生,如果渣、果仁等,综合利用这些副产物,可以促使环境污染问题得到解决,还可以开发出一系列经济效益和社会效益较高的产品。本文简要分析了樱桃啤酒的酿造和加工工艺,希望能够提供一些有价值的参考意见。
Cherry has high sugar content and rich nutrition, which can be added to beer to brew new varieties of beer with cherry flavor. It was found that in the practice of cherry beer processing, there would be a large number of by-products, including fruit residue, nuts and so on. Through the comprehensive utilization of these by-products, environmental pollution problems could be solved, and a series of products could be developed, so the economic and social benefits are higher. In this paper, the brewing and comprehensive processing of cherry beer were briefly analyzed, hoping to provide some valuable suggestions.
