灰霉胞外分泌物对蓝莓果实贮藏品质的影响 被引量:7

Effect of Botrytis cinerea Extracellular Polymer on the Storage Quality of Blueberry

摘要 灰霉在侵染蓝莓果实的过程中会分泌胞外分泌物,并在贮藏过程中对蓝莓品质造成影响。本文研究灰霉胞外分泌物对果实采后贮藏品质的影响。以"莱克西"蓝莓品种为试材,蓝莓果实经过灰霉胞外分泌物处理后,在25℃条件下贮藏。结果表明:在贮藏过程中,灰霉胞外分泌物使蓝莓果实的可溶性固形物(TSS)和可滴定酸(TA)维生素C、总酚和花色苷含量等营养指标下降,且含量始终低于同时期的对照组。而超氧阴离子则随着贮藏时间的延长呈上升趋势。蓝莓果实的PAL、SOD、POD和CAT等抗氧化酶活性先上升后下降,且灰霉胞外分泌物组的蓝莓果实酶活高峰比对照组早2 d达到,而后期酶活始终低于对照组,说明灰霉胞外分泌物导致蓝莓贮藏过程中品质的下降,其商品价值降低。 In the process of infecting blueberry fruit, ash moldy secretes extracellular secretions and affects the quality of blueberries during storage. This paper mainly studies the influence on storage quality of Postharvest Botrytis extracellular secretion, with "Lexie" blueberry varieties of blueberry fruit after B.cinerea extracellular secretion after storage under the condition of 25 DEG C. The results show that: in the process of storage, Botrytis extracellular secretion will make soluble blueberry fruit solids(TSS) and titratable acid(TA) prolonged vitamin C, total phenolic and anthocyanin content of the nutrition index with the storage time decreased, and the content is always lower than the control group at the same time period. The superoxide anion increased with the prolongation of storage time. The antioxidant activity of PAL, SOD, POD and CAT in blueberry fruits first increased and then decreased. And the peak of enzyme activity in blueberry fruit exudates was 2 days earlier than that in control group, but the activity of enzyme activity in blueberry fruits was always lower than that in control group. It is indicated that the exudates from the exudate of grey moldy will lead to the decrease of the quality of the blueberry and the value of its commodity during the storage of blueberry.
