摘要
抗性淀粉作为一种新兴的新型食品成分,已经在食品及慢性病防治中起到重要作用。抗性淀粉具有特殊分子结构,难以被肠道酶类消化,因此能调节糖类吸收速度而稳定血糖水平。并在肠道菌群进一作用下发酵得到一些特殊活性的化合物,这些小分子化合物是重要的益生元,对人和动物的生理机能尤为重要。深度挖掘抗性淀粉的这些功能将有助于功能食品开发及慢性病防治。
Resistant starch is a new type of food ingredients. Recently, it has been applied in the food industry and is considered playing an important role in prevention of chronic diseases. Resistant starch has a unique molecular structure that is difficultly digested by the enzymes in the intestine. Thereby, it could adjust and control the absorption of the carbohydrates and maintain the glycemic level. Meanwhile, the undigested resistant starch could be fermented by the intestinal microorganisms to generate some small molecular compounds, which likely play a key role as prebiotics in maintaining the physiological function of human bebings and animals. The in-depth exploration of these functions of resistant starch would contribute to develop new-type functional food and discover novel strategies for control and treatment of chronic diseases.
