摘要
随着食品工业的发展,冷冻面食制品产业也迅速发展。由于冷链条件的影响,在储运过程中经常发生温度波动变化,导致食品品质下降。阐述了不同抗冻保护剂对冷冻面制品的抗冻保护作用机理以及抗冻剂在不同品类冷冻面食中的应用。
With the development of food industry, frozen wheaten food industry is developing rapidly. The tem-perature fluctuations happened and the food quality declined in storage and transportation due to the effect of cold chain conditions. This paper discussed the antifreeze protection mechanism in frozen wheaten food by vari-ous cryoprotectants and its application.
