摘要
米豆腐作为中国的传统特色小吃,备受消费者青睐。近年来,在制作米豆腐的原料筛选、工艺优化以及品质评价等方面的研究取得了一些新进展。因此,概括总结了米豆腐制品当前的研究现状,并结合对米豆腐行业的了解与思考,旨在为今后米豆腐制品的相关研究提供参考建议,为米豆腐行业的发展奠定一定的理论基础。
As a special traditional snack of China, rice-tofu has always been popular with consumers. In recent years, some new progresses have been made in the selection of raw materials, the process optimization and quality evaluation for making rice-tofu. By combing with the understanding and thinking of rice-tofu industry, the current research status of rice-tofu products was summarized, which aims to provide references and suggestions for the research of rice-tofu products in China, and expect to lay a theoretical foundation for the development of rice-tofu industry.
