石河子产区三个地块的‘赤霞珠’葡萄成熟期间品质的变化 被引量:4

摘要 为了探寻不同土壤含沙量对于‘赤霞珠’葡萄成熟期间品质变化的影响,本试验选取石河子产区种植‘赤霞珠’葡萄的三个地块,分別编号5-1、5-2和5-3,定期测定pH值、总酸、总糖、色度、花色苷、总酚和单宁等指标。结果表明:至采收期,总酸和pH值由高到低的排列顺序为5-3>5-2>5-1,色度和花色苷的积累特点为5-2>5-1>5-3,果实总糖、果皮总酚和单宁的变化趋势均为5-2>5-3>5-1。总体上,5-2地块有利于‘赤霞珠’葡萄果实特征物质的积累,土壤含沙量对‘赤霞珠’葡萄成熟期间的品质改善有重要影响。 To explore effect of diflerent soil of sediment concentration on the quality change of 'Cabernet Sauvignon' grapevines during the maturation, 'Cabernet Sauvignon' grapevines of three plots, 5-1, 5-2 and 5-3, in Shihezi region during the maturation were selected, respectively. Some indexes, such as pH, total acid, total sugar, chromaticity, anthocyanins, total phenolic and tannin, were determinated regularly. The results showed that the sequence of total acids and pH content from the highest to the lowest was 5-3〉5-2〉5-1, the accumulation features of chroma and anthocyanin were 5-2〉5-1〉5-3. The variation trend of total sugar, total phenol and tannin in berries was 5-2〉5-3〉5-1. In general, 5-2 was conducive to the accumulation of characteristic material in 'Cabernet Sauvignon' berry, and soil sediment concentration had an important influence on the improvement of 'Cabernet Sauvignon' berry quality during the ripening.
