摘要 以琼胶寡糖为研究对象,测定琼胶寡糖中还原糖的含量、FRAP值、对DPPH自由基、羟基自由基(·OH)和超氧阴离子自由基(O_2^-·)的清除率,探究琼胶寡糖的总还原力和对三种自由基的清除活力。研究表明,浓度为20 mg/m L的琼胶寡糖样液对DPPH自由基清除率高达94. 43%;浓度为20 mg/m L的琼胶寡糖对羟基自由基清除率为25. 35%; 1 m L的10 mg/m L样液对NBT的超氧阴离子自由基的抗氧化活力为4. 49 u。此外还进一步研究其抗氧化能力和还原糖之间的关系,为琼胶寡糖的产业化提供理论基础。 Taking agar-oligosaccharide as the research object, the determination of reducing sugar, FRAP value, the scavenging rate of hydroxyl radical (·OH ) and superoxide anion radical (O2^-· ) from DPPH radicals in the agar-oligosaccharide were researched. The total reducing power of agar-oligosaccharide and the scavenging activity of three kinds of free radicals were explored. Study showed that the DPPH free radical scavenging rate of the agar-oligosaccharide sample liquid at a concentration of 20 mg/mL was as high as 94.43%. Hydroxyl radical scavenging rate of agar-oligosaccharide at a concentration of 20 mg/mL was 25.35%. NBT antioxidant activity of superoxide anion radical of 1 mL sample liquid at a concentration of 10 mg/mL was 4.49 u. And the relationship between antioxidant capacity and reducing sugar was further studied, so as to provide theoretical basis for the industrialization of agar-oligosaccharide.
