摘要
本实验以研究促钙吸收肽的可控制备为主要内容,用超声波辅助提取出鱼鳞中的酸溶性胶原蛋白,酶解法将胶原蛋白水解成小分子肽,测定与钙的结合量找到制备促钙吸收肽的最佳工艺,采用鲤鱼鳞为原料,减少可利用营养物质的浪费。
In order to study the contMlable preparation of calcium promoting peptide, the acid-soluble collagen from fish scales was extracted by ultrasonic assisted extraction, and the collagen was hydrolyzed into small peptide by enzymatic hydrolysis. The optimum technology for preparing calcium-pro- moting peptide was found by determining the binding amount of calcium and the waste of available nutrients was reduced by using carp scale as raw material.
