摘要 茶多酚是茶叶中最早发现的功能性成分,作为天然来源的食品抗氧化剂和功能配料,其功能特性已通过不同途径得到证实。茶多酚规模化制备技术日趋成熟,其价格也逐渐下行,这也为其在食品行业产业化应用奠定了基础。作为绿色食品添加剂和配料的代表,其活性功效包括抗氧化、防腐、保鲜、护色等。文章梳理了茶多酚及其衍生物的功能及其在食品保鲜中的应用,为茶多酚系列功能配料的深度开发提供必要依据和价值参考。 Tea polyphenols is the first functional component found in tea. As a natural source of food antioxidants and functional ingredients, its fhnctional properties have been confirmed by many different research projects. The largescale preparation technology of tea polyphenols is becoming more and more mature, and the price of tea polyphenols is also gradually descending, which lays a foundation for the industrialization application of tea polyphenols in food industry. As a representative of green food additives and ingredients, its efficaey and activity include antioxidant, preservative, fresh-keeping, auxiliary color, etc. This paper reviewed the funetions of tea polyphenols and their derivatives and their application in food fresh-keeping processing, which provided necessary basis and value reference tbr the fhrther development of tea polyphenols series funetional ingredients.
