茶多酚对水产品保鲜作用的研究进展 被引量:12

摘要 水产品含有丰富的蛋白质和脂肪酸,但易腐败变质,因此水产品的保鲜技术尤其是生物保鲜已成为研究热点。茶多酚是一种很好的生物保鲜剂,对水产品具有良好的抗菌和抗氧化作用,能有效地抑制微生物的生长、延缓脂肪氧化、延长水产品的货架期。文章介绍了茶多酚保鲜机理,综述了茶多酚在水产品保鲜中的应用和复合保鲜技术,并进行了展望。 Aquatic products are rich in proteins and fatty acids, but they are prone to corrupt and degenerate. So the preservation technology of aquatic products has become a hot research, especially the bio-preservation. Tea polyphenols are good bio-preservatives and have good antibacterial and antioxidant abilities on aquatic products. They can effectively inhibit the microorganisms growth, delaythe fat oxidation and extend the shelf life. This paper introduced the preservation mechanism of tea polyphenols, summarized the preservation application of tea polyphenols in aquatic products and the compound preservation technology, and gave a prospect.
