制约山东茶叶初加工清洁化的关键控制点调研 被引量:1

摘要 为了探明山东茶区茶叶初加工的清洁化现状,选择日照、泰安、临沂和威海四个茶区24家不同年代、规模的具有代表性茶叶初加工企业,采用问卷调查法和实地考察法,对企业基本情况、茶厂建设和布局、功能区设置、加工设备、产品等近60项指标进行了调研,结果表明:山东茶叶初加工企业在茶叶加工厂选址、卫生管理制度的制定、车间的建设和加工设备材质等方面基本能满足茶叶清洁化加工的要求,但在加工厂的功能区设置与布局、茶叶的暂存和转运、加工设备的能源、管理制度和人员、加工原料(鲜叶)管理等方面存在较多问题,且严重制约了山东茶叶初加工的清洁化。在上述调研分析的基础上,筛选出了制约山东茶叶初加工清洁化的关键点,并从政府、科技、企业三个方面分别提出推进山东省茶叶初加工清洁化的建议。 To find out the cleanliness status of tea primary processing in Shandong tea area, 24 representative tea processing rhetorics in Rizhao, Tai'an, Linyi and Weihai were selected and investigated. Using questionnaire method and field trip method, researches on nearly 60 indicators were conducted, including the basic situation of the enterprise, the construction and layout of the tea factory, the setting of functional area, processing equipment, products and so on. Results showed that the tea primary processing rhetorics in Shandong basically meet the requirement of cleaning processing in site selection, health management system formulation, workshop construction and material quality of processing equipment. However, problems still exist in the setting and layout of the functional areas, the temporary storage and transport of tea, the energy of the processing equipment, the management system and personnel, and the raw materials ( fresh leaves ), which seriously restricted the cleanliness of the tea processing in Shandong. Based on the investigation and analysis above, the key points that restrict the cleaning of tea primary processing in Shandong province were selected, and suggestions were put torward to promote the cleaning of tea primary processing from the three aspects: government, science & technology and enterprises.
