摘要
本研究实验室保存的五株乳酸菌为实验菌株,从产酸能力、抑菌能力、O2^-·清除能力进行测定,研究结果表明:五株菌中产酸能力以粪肠球菌L-2最佳,对大肠杆菌、金黄色葡萄球菌均有一定的抑制能力,且其抑菌物质主要存在于培养上清液,五株菌株对O2^-·均有清除能力,其中以L-2培养上清清除效果最佳。
In this research, the ability to produce acid, antibacterial ability, O2^- ·clear ability were determined with the tlve strains of Lactic acid bacteria, preserved in the laboratory. The results showed that: the L-2 had the optimum ability of acid production, tlve of the strains had the inhibit to E.coli and Staphylococcus aureus, and the antibacterial substance existed in the all strains, in the test, eouht clear O2^- · ,the fermentation supernatant of L-2 was the best.
