摘要
随着近年来食品种植、养殖趋于自动化、科技化及商业化,越来越多的化学材料被应用于食品生产、加工行业。由此引发的食品安全事故屡屡发生,使得我们在平时生活中不得不重视食品中所含的化学材料成分。由于植物类食品种植过程中避免病虫害,农药类化学材料一直被广泛应用,浇灌的水、种植土壤也存在不同种有机污染物,这就造成食品种植过程中吸收了大量化学材料,从而存在食品安全隐患。动物类食品养殖过程里摄入的生物毒素以及后期制品所添加的抗氧化剂等食品添加剂是目前影响食品安全的主要原因之一。本文旨在对比国内外食品安全调查报告,从食品安全的角度对化学材料在食品工业中应用现状及策略作综述性的阐述。
In recent years, with the food planting and breeding tend to be automated, scientifc and commercial, more and more chemical materials have been used in food production and processing industries. As a result, food safety accidents have occurred frequently, so we have to pay attention to the chemical materials contained in food in our daily life. Due to the avoidance of plant diseases and insect pests in the process of plant food planting, pesticide chemical materials have been widely used. Different kinds of organic pollutants also exist in irrigated water and planting soil, which causes a large amount of chemical materials to be absorbed in the process of food planting, thus causing potential food safety hazards. Food additives such as biotoxins ingested in animal food breeding and antioxidants added in later products are one of the main reasons affecting food safety at present. The purpose of this paper is to compare the food safety investigation reports at home and abroad, and to give an overview of the current situation and strategies of chemical materials in the food industry from the perspective of food safety.
