摘要
本文以粤式早茶中典型的广州早茶为例,阐述粤式早茶从起源到形成文化的过程,了解到广州人热衷于"叹早茶"的原因是他们认可早茶的内涵与作用。通过对广州早茶发展现状的分析,发现阻碍广州早茶发展的因素包括外来餐饮的双重夹击、技术型人才短缺、机械化的过量使用。挖掘广州早茶发展的价值,并针对阻碍早茶发展的因素提出相应有效的建议。
This article take the Guangzhou style tea as an example, expressing the process from its origin to now and knowing the reason why Guangzhou citizens enjoy Yum-cha very much is that they identify the connotation and function. Through the Research on the status of Guangzhou style tea, we found that the factors which influence the development of Guangzhou style tea are the combat from other restaurant, the lack of technical talent and excessive use of machinery. Finally, for the inheritance and development of Guangzhou style tea, some feasible measures will be put forward.
