摘要
纳他霉素是国际上唯一获得批准的高效、安全的抗真菌生物防腐剂,在食品工业中具有广泛的应用前景。但仍存在不容忽视的问题:该物质几乎不溶水,其环状结构易受紫外线和氧气的破坏。本文主要针对上述问题,概述了纳他霉素在增溶、与其它防腐剂联合使用在抗菌性能与安全性以及可能存在的机制,同时还论述了其在食品活性包装领域中的研究进展,为纳他霉素在食品活性包装领域中的应用提供了应用参考。
Natamycin is the only highly effective and safe antifungal biopreservative approved in the world, which has a wide application prospect in food industry. However, there are still problems that cannot be ignored. The substance is almost insoluble in water, and its ring structure is easily damaged by ultraviolet rays and oxygen. Focused on the above problems, this paper outlined the antibacterial properties and safe ty of natamycin in combination with other preservatives, and its possible mechanisms, and discussed its progress in the field of food active packaging. The research progress provides an application reference for the application of natamycin in the field of food and active packaging.
