玉足海参仿生酶解的工艺研究 被引量:2

Study on the Technology of Biomimetic Enzymatic Hydrolysis of Holothuria leucospilota

摘要 研究玉足海参仿生酶解的最佳工艺。以玉足海参水解蛋白含量及干膏得率的综合分数为指标,在单因素试验的基础上,运用正交设计筛选出最佳仿生酶解参数。最终确定了玉足海参仿生酶解最佳工艺条件:料液比为1︰8 (g/mL)、反应温度为40℃、胃蛋白酶的pH为1.5、胰蛋白酶的pH为8.5、胃蛋白酶用量为底物的1.0%、酶解时间为0.5 h、胰蛋白酶用量为底物的1.5%、酶解时间为3.5 h。在优选出的酶解工艺条件下,测定的玉足海参水解蛋白含量及干膏得率的综合分数最高,该工艺合理、可行、提取率高。 It was to study the optimal process of biomimetic enzymatic hydrolysis of Holthuria leucospilota protein. With the evaluation of the total score of protein content and dry paste yield of Holothuria leucospilota as an index, conduct the orthogonal experiment for getting optimum biomimetic enzymatic parameters. The optimum technological conditions for the enzymolysis of Holthuria leucospilota were as follows: the radio of material and liquid was 1︰8(g/mL), the reaction temperature was 40 ℃, the pH of pepsin was 1.5, the pH of trypsin was 8.5, the dosage of pepsin was 1.0% of the weight of dried Holthuria leucospilota powder, the time of enzymolysis was 0.5 h, the dosage of trypsin was 1.5%, and the enzymolysis time was 3.5 h. The optimum conditions for enzymatic hydrolysis could reach the maximum total score of protein content and dry paste yield of Holothuria leucospilota, and it was reasonable, feasible and efficient.
